Spent almost a full day buying things to cook and eat, then cooking and eating them.

If you ever need to feed a vegetarian army, this is a good thing to make.

Embarrassingly, I missed that it said 2kg of potatoes, not 2lbs, so the topping is a bit stingy, but eh, delicious, who cares. I got about four dinners for at least two people, and at least three lunches out of it.

I also made a soup similar to this, except I roasted the squash because I couldn’t be arsed to peel them. Last time I tried, I cut my fingers to ribbons.

Exciting, no?

I’m also going to bed very early, so I’m really living it up in the big city today, eh?
