The best thing about making a vatful of potato-leek soup, aside from, of course, having potato-leek soup for dozens of lunches over the next couple of months, is that, if you are making said soup on your stovetop, the leftover leek, potato, onion, celery, and carrot detritus that you would be normally be tossing into the compost or trash can go into a crockpot with water to make more stock to replace the stuff you used in the stovetop stuff.
